Sushi Fuku is a model of sushi restaurants in fast-casual approach. The chef is inspired by food serving system in Chipotle Mexican Grill. The ordering system is well-designed, and customers can easily make decisions and get food within one to two minutes. The chef aims at food quality and diversity, and those features make Sushi Fuku a popular restaurant near PITT. The best part of Sushi Fuku is that you can get the food within a short time. I never hesitate to walk in it when twenty people are in the line. It is not a follower of Chipotle since the system they used is widely used in industry for decades. High-Quality food is the main reason that drives me to Sushi Fuku again and again.
In Sushi Fuku, there is sushi roll, poke bowl and sushi burrito. The inner ingredients are the same. You can order cooked or raw protein, tempura, veggies, masago, and crunchy onions. My favorite ones are unagi (eel) and baked tofu. Unagi is famous in Aisa. It’s cut in pieces, cooking with soy sauce, pepper, and sake. Baked tofu is the best tofu I have ever eaten in the US. It’s not soft, but firm; people can easily hold it with chopsticks. Extra fee will charge if you order two or more protein. Then, you can choose up to four veggies, sauces, toppings, sides, and drinks. I like to add carrot, cucumber, kimchi, and edamame. One thing I want to say that, edamame is a common food in China. Restaurants used to serve it before lunch, for free. I’m glad to see so many food options, since Oakland is not famous as a food destination.
However, I never eat sushi roll or burrito in Sushi Fuku. They are made by a sushi roller machine. It’s not the food I want to eat. I doubt if it ‘s over-pressed, or under-pressed. For times I saw server was unable to cut sushi roll since sushi is too loose. The quality of sushi might be the greatest issue in fast-casual sushi. With more and more restaurants, coffee, markets provide sushi, people are not embraced. The difference between freshly-made sushi and sushi in a refrigerator is hard to cross. Rice is hard to chew, and raw fish has a nausea smell. The only burden for Sushi Fuku is to balance quality of sushi and serving speed. Anyhow, I only order poke bowl here, and I still give it a high score.
